Dear reader,

Humans, like all the other living organisms that inhabit the Earth, depend on food for survival. What would we do without food? I’m sure many of you would answer something along the lines of, “We would die.” And yes, we would die without food. But what makes food so important to our bodies goes way beyond filling an empty stomach with pizza and soda to prevent starvation.

My name is Celine Aubry-Dumand, and I’m the Editor-in-Chief of El Cid. As a food and health enthusiast, I hope to inform, educate, and introduce to you, readers, the basics of nutrition and the role that food plays in our health and well-being.

Much of the food that is produced today, especially processed food, is intentionally designed by food manufacturers to look and taste good so as to entice consumers like you to buy their products. But buyer beware! Just because something looks appealing doesn’t mean that it’s good for you, even if it’s something as seemingly harmless as dried fruit.
