Growing up so close to the border, Cathedral Catholic High School students are surrounded by some of the most authentic Mexican cuisine available in the country. Around 60 students responded to an El Cid Instagram post with their opinion on San Diego’s best taco shop. The Taco Stand in Encinitas was the most popular answer by far, so I set out to try it myself. I have to agree with all its fans, as the shop itself checked every box. With the right kind of music, favorable food, and the beachy Southern California vibe, The Taco Stand gets my stamp of approval for your next Taco Tuesday.
